Born in San Diego in 2007, The Cookie Sandwich Company is the brainchild of proud parents Jennifer (the baker) and her husband Rick (the eater).
It all started years ago when we used to fill the tummies of our friends and family with our creative concoctions. All of sudden word quickly spread and we began receiving requests from complete strangers. What started as a joke turned into a real life changing decision. To turn our passion into a business was not an easy one since Jen was four weeks pregnant and we were going completely broke from real estate. As demand grew so did her belly! Before we knew it we were entrepreneurs — a dream come true.
We are confident that you have not tried anything quite like our original Cookie Sandwiches and are sure we will satisfy any sweet tooth. For our decadent treats we use only the freshest premium ingredients and chocolates, but most importantly they are made of butter... and love. Lots of it!

Jennifer Daximillion - President/Founder (the baker)
Born and educated in Denver, Colorado, Jennifer brings her many years in retail sales and management to the team. Growing up learning invaluable life lessons from her hard working mom, Jennifer incorporates her strong core values into the company.
With Jennifer's natural baking sense and Rick's innate creativity they developed the first cookie sandwich. Today, Jennifer enjoys creating new recipes and overseeing the day-to-day operations while finding that delicate balance motherhood requires.
Rick Daximillion Seow - Vice President (the eater)
A native of the beautiful Caribbean islands of Trinidad and Tobago, Rick has spent over 12 years working in the restaurant industry. He then put his entrepreneurial passion into operating a successful real estate company in Southern California.
Now in his early thirties, Rick oversees the sales and marketing for the company. Today he uses his business acumen with regards to all aspects of The Cookie Sandwich Company. Constantly balancing between business and travel, Rick manages to keep his son and wife at the forefront.
Rick and Jen's paths crossed almost a decade ago. With a passion for traveling, they have made it a priority in their lives to learn about the world on a first-hand, up-close-and personal basis. Seeing ancient lands, meeting people from all cultures, tasting worldly cuisines and exploring vibrant cities has been humbling and incredibly gratifying for the couple.
They have successfully blended their wide range of work experiences with their real-life travel adventures to create a forward-thinking and creative company, The Cookie Sandwich Co.
